abstract FIELD: food industry. ^ SUBSTANCE: invention relates to technology used in production of diet flour confectionary products. Girasol-sunflower is cut, dried in microwave field at specified parametres down to residual moisture of around 20%, fried and exposed to cryo-grinding in liquid nitrogen to make flour. Dough is made from wheat flour mixed with flour from girasol-sunflower, yolks, salt, soda, vegetable oil, phospholipids and water, and sheets are baked. Depending on filling formula, girasol, girasol-sunflower, yacon or chicory are cut, dried in microwave field at specified parametres of the process, fried. Cumquat rind is extracted with liquid nitrogen to separate according miscella. Girasol, girasol-sunflower, yacon or chicory are impregnated with separated miscella in cryo-mill drum, and cryo-grinding is carried out in the medium of released nitrogen to produce flour. To produce filling, flour of girasol, girasol-sunflower, yacon or chicory is mixed with culinary fat, dry milk, sweetener "Sladeks" and waffle crumb.
