abstract | FIELD: food products. n SUBSTANCE: method provides for protein raw material hydrolysis. Baker's yeasts and caseine are used as protein raw material. Hydrolysis is performed by enzymic complex, obtained from choleric vaccine production wastes - ultrafiltrate culture liquid - cholera vibrio producing strain M 41 at 45°C and pH 7.4±0.2 during 20-22 hours with nutrient base production. Baker's yeasts enzymic hydrolyzate or caseine enzymic hydrolyzate are used as nutrient base in mentioned nutritional mediums. Nutritional mediums contain baker's yeasts enzymic hydrolyzate or caseine enzymic hydrolyzate, chloride natrium, tapwater and agar.
