FIELD: food processing industry. n SUBSTANCE: enzyme solid-phase reaction mixture contains lipase, at least 14 mass % of glycerol and glyceride with iodine number of 5-35 and solid fat content 75 % or more at 20°C. Mixture may additionally contains lecithin. Mixture is crystallized by spraying or granulated, or made in form flakes, or extruded. Mixture is produced by melting of glyceride optionally in combination with lecithin, followed by addition lipase solution in glycerol into fatty phase, mixture agitation, homogenization and treatment up to solidification. After reaction in solid-phase mixture solid substance containing more than 40 % of monoglyceride is formed.
