abstract | FIELD: food processing industry. n SUBSTANCE: grape is squeezed to obtain juice and husks. Husks are poured with water and kept for carrying out hydrolysis with native acids followed by separation of extract and it concentrating. The concentrate is blended with the early prepared juice and an aqueous extract prepared from mixture of bilberry and cowberry leaves and hibiscus flowers is added to the blend. The presence of pectin in liquid phase confers radioprotective properties to beverage that can be prepared from both dark and light strains of the grape. n EFFECT: improved producing method, valuable properties of beverage. |
