abstract FIELD: food-processing industry. SUBSTANCE: method involves impregnating raw plant material with liquefied gas under pressure above atmospheric pressure and releasing pressure to atmospheric value at rate providing freezing of raw material; before impregnation procedure, treating raw plant material with preparation produced by sequential extracting of Mortierella elongate micromycet biomass with the use of non-polar extractant in above-critical state, water, alkaline, water, acid, water, alkaline, and water, with following joining of first extract with solid residue and holding for 2-5 hours, said preparation being used in an amount of 0,5-1•10 4 . Ammonia is used as impregnation gas. EFFECT: improved organoleptical properties of product due to elimination of opalescence.
