abstract FIELD: technology of food-concentrate industry. SUBSTANCE: the present innovation deals with manufacturing concentrates of beverages. For this purpose, prepared bananas are treated with preparation obtained out of Mortierella pulchella micromycete biomass according to the preset technology and kept for 2-5 h. Then comes purification, pulp is reduced to obtain juice, skin is hydrolyzed, hydrolyzate is separated to blend it with juice.
