titleOfInvention Method and apparatus for electric coagulation of milk
abstract FIELD: food-processing industry, in particular, canned milk production. SUBSTANCE: method involves creating acidity in milk medium at the level of pH values, at which protein milk mass coagulates. Hydrogen ion activity changes in the process of inducing in liquid milk medium of secondary short-circuit currents by means of plated Z-shaped inductor connected to ac source. Apparatus has bath, plated Z-shaped inductor located in bath and connected to ac source, and screw with electric drive, with inductor and screw being attached to bath upper closures. Bath is equipped with branch pipes for supplying milk, discharge of liquid remains and milk-protein mass. Milk-protein mass is produced by supplying milk into bath incorporating electric coagulator. While milk flows between zigzags of electric coagulator, it acquires predetermined acidity under the action of induced current. As a result of coagulation, milk protein mass rises to milk surface at the level of screw and discharge branch pipe, from which it is delivered for further predetermined processing. EFFECT: intensified milk-protein mass production due to creating secondary short-circuit currents in liquid milk medium. 3 cl, 5 dwg
