titleOfInvention Method of preparing raw plant material for juice squeezing
abstract FIELD: food-processing industry. SUBSTANCE: method involves impregnating raw plant material with liquefied gas, such as ammonia, at pressure above atmospheric pressure; releasing pressure to atmospheric value at rate providing freezing of raw material. Before impregnation process, raw plant material is treated with preparation produced by sequential extracting of Pythium catenulatum micromycet biomass with the use of non-polar extractant in above-critical state, water, alkaline, water, acid, water, alkaline, and water, with following joining of first extract with solid residue. Said biomass is used in an amount of 0,5-1•10 -4 mg/t and held for 2-5 hours. EFFECT: improved organoleptical properties by eliminating opalescence of product. 2 ex
