abstract | FIELD: food industry. SUBSTANCE: chewing gum is covered with glaze containing primary substance of glaze and salt poorly-yielding to dissolving in water. Said salt is dissolved in water with temperature of 10 C in range from 0.5 to 9 mas.%, and it composes from 0.5 to 15 mas.% of glaze composition. In preferable version, glaze, in the form of salt poorly-yielding to dissolving in water, contains calcium gluconate, while as primary substance of glaze, xylitol. Preliminarily determined is effective concentration of salt poorly-yielding to dissolving in water, including in composition of glazed syrup.
