abstract | FIELD: organic chemistry, food industry. SUBSTANCE: invention proposes novel derivatives of aspartyl dipeptide ester (including their salts) presented by the formula (I) where each among R 1 , R 2 , R 3 , R 4 , R 5 means independently each of other substitute taken among hydrogen atom (H), hydroxyl group (OH), alkoxy-group (OCH 3 , OCH 2 CH 3 , OCH 2 CH 2 CH 3 and so on) with 1-3 carbon atoms, alkyl group (CH 3 , CH 2 CH 3 , CH 2 CH 2 CH 3 and so on) with 1-3 carbon atoms; R 6 means substitute taken among hydrogen atom, benzyl group (CH 2 C 6 H 5 ), cyclohexylmethyl group (CH 2 C 6 H 11 ), phenyl group (C 6 H 5 ), cyclohexyl group (C 6 H 11 ), phenylethyl group (CH 2 CH 2 C 6 H 5 ) and cyclohexylethyl group (CH 2 CH 2 C 6 H 11 ); R 7 means substitute taken among hydrogen atom, methyl group (CH 3 ), ethyl group (CH 2 CH 3 ) and isopropyl group (CH(CH 3 ) 2 ); R 8 means substitute taken among methyl group, ethyl group, isopropyl group, n-propyl group (CH 2 CH 2 CH 3 ) and tert.-butyl group (C(CH 3 ) 3 ) under condition that derivatives comprising benzyl group as R 6 and with hydrogen atom as R 7 as well as p-hydroxybenzyl group as R 6 with hydrogen atom as R 7 are excluded.
