abstract FIELD: alcoholic beverage industry. SUBSTANCE: production of vodka called "Gubernator Zapolyar'ya" (Transpolar region governor) consists of following operations. Alcohol-water solution (assortment) is prepared in such way as to obtain 40% vodka. Aqueous solution of sodium citrate is prepared in separated container (enamel coated or of glass) combining sodium citrate and sodium bicarbonate aqueous solutions and added to assortment. The latter is then thoroughly stirred and, after adjusting its concentration, pumped into pressure tank and from there into coal-treatment battery. Velocity of filtration of assortment through 4-m coal bed achieves 40 dal/h for fresh coal and 30 dal/h for regenerated coal. Water- alcoholic infusion of dried sea kale is prepared by single infusion and distilled jointly with water-alcoholic liquid to give fragrant alcohol. Honey solution is prepared by dissolving honey in corrected water at ratio 1:5, heating solution to reflux, filtration, and cooling. Fragrant alcohol, honey solution, sugar in the form of 65.8% sugar syrup or aqueous solution are successively added to vodka contained in adjustment tank. Contents of adjustment tank are agitated after addition of each ingredient, adjusted if necessary, and bottled after obligatory control filtration. Finished vodka contains following amounts of ingredients, kg per 1000 dal: citric acid 0.4-0.6, sodium bicarbonate 0.7- 0.9, genuine honey 0.9-1.2, water-alcohol liquid - the balance.
