FIELD: fat-and-oil industry. SUBSTANCE: ready-to-use edible fat-and-oil product contains, as phospholipid component, phospholipids obtained by quadruple mixing of preheated edible vegetable phospholipids with organic solvent, addition, before third mixing, of mixture of citric and succinic acids (from 1:1 to 3:1 in ratio) in water-bearing acetone in amounts 1 to 2.5% of the weight of phospholipids, and phase separation to give solution of neutral lipids in solvent and phospholipids, which are then dried. Neutral lipids contained in phospholipid product impart antiinflammatory activity enabling the use of product in dietetic nutrition. EFFECT: improved nutritive quality of product. 1 tbl, 2 ex |
