titleOfInvention Method for producing dragee
abstract FIELD: food industry, in particular, production of confectionery. SUBSTANCE: stock materials are delivered and made ready for production of dragee shells of various shapes, such as nuts and/or candied fruits and/or fruits and/or berries and/or dried fruits and/or large-size sugar crystals. Grist is produced, followed by preparing glazing syrup by prolonged cooking and evaporating mixture of water and sugar, to which treacle is added. Then follows panning process by subjecting dragee shells to multi-step treatment to produce semifinished dragees. The latter are subjected to finishing treatment by strewing them in sugar powder and/or by subjecting them at least single glazing operation by glazing agent prepared by mixing butter, wax, paraffin and sugar syrup, glazing operation is carried out in dragee pan or drum. Then dragees are left to mature, prepacked and, finally, packed. In fist two steps of panning, dragee shells are subjected to three-component treatment. For this purpose, in each step dragee shells are treated in succession, first with sugar, then with granulated sugar, and, finally, sugar powder. When three-component treatment completed, dragee shells are subjected to at least two-fold treatment by repeatedly dipping dragee shells and by sprinkling them into syrup and then into sugar powder. During final treatment step, at least one of components is additionally enriched with flavor or dyeing agent.
