abstract FIELD: inspection of quality of agricultural crops. SUBSTANCE: during vegetation period fluorescence spectra set registered by exciting surface by light of surfaces of potatoes and shapes of fluorescence waves radiation are revealed, which correspond to fats and vitamins contents. Measurements are carried out in sequence during period of maturity, and grade of physiological maturity of potatoes is evaluated from relation of values of intensities of this radiation.
