titleOfInvention Method for wasteless processing of bones
abstract FIELD: meat industry. SUBSTANCE: crushed bones with pieces of meat are pre-processed before degreasing by mixing in cold water for 40-50 min, then cleaned bones are separated from the resulting suspension and the latter is divided into meat mass and liquid by processing it in a centrifugal field. The separated liquid is used for treating the next portion of bones and the bones cleaned of pieces of meat are again crushed and heated in two stages, first by a conductive method, then by centrifugal wringing for 3-10 min under live steam. The separated fat is cleaned by separation while the bones are dried, calibrated for extraction of coarsely-cut meat and the remaining mass is ground into meal. EFFECT: higher efficiency.
