abstract | FIELD: agriculture. SUBSTANCE: method involves processing of meat-and-bone material after boning of carcasses mainly of cattle, placing it into sealed container, filling with water and delivering live steam into container at a pressure of 1.5-5 atm. Heat treatment is conducted for at least 3 h with subsequent thorough sealing, holding the material in broth produced without the escape of steam for at least 6 h, and drying.
