abstract | 1. A powder for coloring a food product or surface of a food product when heated, the powder containing a plant extract, a chemical carrier base, in which the plant extract contains a compound with at least one aromatic ring having at least two hydroxyl groups linked to two adjacent carbon atoms of this aromatic ring. 2. The powder according to claim 1, wherein the compound is selected from the group consisting of catechin, epicatechin, gallate (ep) catechin, caffeic acid, chlorogenic acid, rosmarinic acid, quercetin, kaftaric acid and rutin. The powder according to claim 1 or 2, in which the plant extract contains the compound in an amount of 4-70 mass. %, preferably 10-50 wt. %.four. The powder according to claim 1 or 2, wherein the plant extract is an extract from a plant selected from the group consisting of tea, grape seeds, onions, coffee, artichoke, chicory, rosemary, oregano, basil, apple, eggplant, grapes, pears, plums, potatoes, sunflowers, and combinations thereof. 5. A powder according to claim 1 or 2, wherein the chemical base is selected from the group consisting of sodium bicarbonate, sodium or potassium hydroxide and calcium carbonate. A powder according to claim 1 or 2, wherein the carrier is flour. A powder according to claim 6, wherein the flour is selected from the group consisting of wheat, corn, rice, maize, buckwheat, sweet chestnut, quinoa and soy flour. The powder according to claim 1 or 2, in which the compound is present in an amount of 0.001-10 mass. %, preferably 0.01-1 mass. %, more preferably 0.05-0.5 mass. % powder. 9. The powder according to claim 1 or 2, in which the chemical base is present in an amount of 5-40 mass. %, preferably 8-25 wt. %, more preferably 10-15 mass. % powder. 10.
