abstract | 1. The composition of the fat mixture, including 20% or less saturated fatty acids, including: 38% or less palmitic acid (C16: 0) and 20% or more stearic acid (C18: 0); where the specified fat mixture is obtained from a solid fat base comprising from 5% to 100%, comprising from 5% to 100% of one or more solid fats and at least 5% stearic acid. 2. A fat mixture composition according to claim 1, characterized in that 32% or less of saturated fatty acids are palmitic acid. The fat composition of claim 1, wherein 28% or more of the saturated fatty acids are stearic acid. The fat mixture composition according to claim 1, characterized in that 3% or less of saturated fatty acids are lauric acid. The fat mixture composition according to claim 1, characterized in that 1.5% or less of saturated fatty acids are myristic acid. The fat mixture composition according to claim 1, characterized in that the fat mixture is obtained from a solid fat base of 5% to 45%. 7. The fat mixture composition according to claim 1, wherein the solid fat is selected from fully hydrogenated oil, fractionated oil or fat, transesterified oil or fat, or a mixture thereof. The fat mixture composition according to claim 7, characterized in that the solid fat is selected from fully hydrogenated rapeseed oil with a low content of erucic acid, fully hydrogenated rapeseed oil with a high content of erucic acid, fully hydrogenated sunflower oil, fractionated sunflower oil with a high content of stearic acid, fractionated shea butter, cocoa butter or mixtures thereof. 9.
