A mutant, non-naturally occurring or transgenic plant cell comprising: (i) a polynucleotide comprising a sequence encoding neoxanthine synthase and having at least 60% sequence identity with SEQ ID NO: 1 or SEQ ID NO: 6, or consisting or essentially consisting of it; (ii) a polypeptide encoded by a polynucleotide set forth in (i); (iii) a polypeptide having at least 66% sequence identity with SEQ ID NO: 2 or at least 60% sequence identity with SEQ ID NO: 7; or (iv) a construct, vector or expression vector containing the isolated polynucleotide set forth in (i) and wherein the expression or activity of the neoxanthin synthase is altered from that of a control or wild-type plant. A mutant, non-naturally occurring or transgenic plant containing the plant cell of claim 1.3. A method for altering the content of carotenoids in a plant, comprising the following steps: (a) altering the expression or activity of neoxanthin synthase in a plant, preferably, wherein the neoxanthin synthase comprises: (i) a polynucleotide comprising a sequence encoding neoxanthin synthase and having at least 60 % sequence identity with SEQ ID NO: 1 or SEQ ID NO: 6, or consisting of or actually consisting of it; (ii) the polypeptide encoded by the polynucleotide set forth in (i); or (iii) a polypeptide having at least 66% sequence identity with SEQ ID NO: 2 or at least 60% sequence identity with SEQ ID NO: 7; (b) measuring carotenoid content in at least a portion of the mutant, non-occurring in nature or a transgenic plant obtained in stage (a); and (c) you
