abstract 1. A shortening composition comprising a blend of cellulose fiber, hard fat and liquid oil, said shortening composition comprising less than about 1% water, based on the total weight of the composition. The shortening composition of claim 1, wherein the cellulose fiber is derived from a plant source. The shortening composition of claim 1, wherein the cellulosic fiber comprises wood pulp, bamboo, pea, citrus or sugar beet cellulose fiber. The shortening composition of claim 1 or 2, wherein the cellulosic fiber is present in an amount of about 1 to 15% by weight of the total composition. The shortening composition of claim 1 or 2, wherein the amount of cellulosic fiber is from about 3 to 10% by weight of the total composition. The shortening composition of claim 1 or 2, wherein the amount of cellulosic fiber is from about 3 to 6% by weight of the total composition. A shortening composition according to claim 1 or 2, wherein the solid fat comprises a fully or partially hydrogenated oil, a solid stearic fraction, a diglyceride, a monoglyceride, a wax, or a mixture thereof. The shortening composition of claim 7, wherein the fully hydrogenated oil is selected from fully hardened fish oil, fully hardened animal oil, fully hardened palm oil, fully hardened rapeseed oil with a high erucic acid content, fully hardened soybean oil, fully hardened sunflower oil, fully hardened hardened corn oil, fully hardened peanut oil, fully hardened safflower oil, fully hardened olive oil, fully hardened palm stearin, �
