The composition of claim 1, wherein the polyhydric alcohol is selected from compounds of formula I where m is an integer from 5 to 10, X is an m-valent linear or branched aliphatic or cycloaliphatic radical having from 5 to 10 carbon atoms, which may be substituted or unsubstituted. 3. The composition according to claim 1, where the polyhydric alcohols are linear or cyclic alcohols, giving during oxidation monosaccharides represented by the formula (II) or (III) where n is an integer from 3 to 8, and io represents an integer from 5 to 10.4. The composition according to claim 3, wherein the alcohol giving the monosaccharide during oxidation is selected from sorbitol, mannitol, xylitol, ribite and inositol, and their derivatives. The composition according to claim 1, where the polyhydric alcohols are monosaccharides of the formula (IV) or (V) and their derivatives, where is an integer from 4 to 5, and q, r are integers, and q + r is 3 or 4.6. The composition of claim 5, wherein the monosaccharide is selected from aldoses of allose, altrose, galactose, glucose, gulose, idose, mannose, talose, glucoheptose, mannoseptose or ketose fructose, psicose, sorbose, tagatose, mannoheptulose, sedoheptulose, altoheptulose, t derivatives. 7.
