abstract 1. A composition comprising an electrostatic complex comprising at least one glucosinolate and at least one milk protein, wherein the composition is an emulsion or foam. The composition of claim 1, wherein the milk protein is selected from the group consisting of protein fraction of cow's milk, protein fraction of skim milk, milk protein concentrate, milk protein isolate, micellar casein, caseinate, α-casein, α-casein, β-casein , k-casein, acidic or fresh whey protein fraction, whey protein concentrate, whey protein isolate, α-lactalbumin, β-lactoglobulin, bovine serum albumin, lactoferrin, or combinations thereof. 3. The composition of claim 1, wherein the milk protein is β-lactoglobulin. The composition of claim 1, wherein the glucosinolate is selected from the group consisting of aromatic glucosinolates, such as glucosinolates derived from phenylalanine, heterocyclic glucosinolates, such as indolyl glucosinolates, such as glucosinolates derived from tryptophan, and aliphatic glucosinates, such as from methionine, alanine, leucine or valine, or homologues of these extended chain amino acids, and combinations thereof. 5. The composition of claim 1, wherein the glucosinolate and milk protein are present in the complex in a molar ratio in the range of about 20: 1 to 1:20, preferably in a molar ratio in the range of about 10: 1 to 1: 1, most preferably in the range from about 5: 1 to 1: 1.6. A composition according to any one of claims 1 to 5, which has a pH in the range of about 2-9, preferably about 3-7.7. A composition according to any one of claims 1 to 5, which
