abstract 1. A method of obtaining an extract of polyphenols formed as a result of a brewing process, comprising at least one step of contacting partially refined beer with a resin that adsorbs polyphenols, followed by a step for recovering polyphenols adsorbed on said resin, said step for recovering comprising a step for desorption of polyphenols with using an organic solvent from a hydrophobic and non-ionic resin that adsorbs polyphenols. ! 2. The method according to claim 1, in which the stage of extraction of polyphenols includes the following stages:! (i) desorption of polyphenols adsorbed on a resin in contact with partially refined beer; ! (ii) adsorption of polyphenols onto a second resin from the first, said second resin is hydrophobic and non-ionic; and! (iii) desorption of polyphenols adsorbed on a second resin using an organic solvent. ! 3. The method according to claim 1, in which the partially purified beer is in contact with a hydrophobic and non-ionic resin that adsorbs polyphenols. ! 4. The method according to claim 1, comprising the following stages:! (i) partially filtered beer is contacted with the polymer polyvinylpyrrolidone (PVPP); ! (ii) the PVPP is washed with an alkaline solution; ! (iii) the PVPP wash solution is contacted with a second resin that adsorbs polyphenols, said second resin being hydrophobic and non-ionic; ! (iv) polyphenols are desorbed from a second resin; ! (v) the polyphenols are concentrated. ! 5. The method according to claim 4, in which in step (ii) the PVPP is subjected to two washes with sodium hydroxide, and in which only the sodium hydroxide solution from the first wash is used in step (iii). ! 6.
