The method of claim 1, wherein the precipitated gellan gum provides an ultimate static shear stress of the 0.1% gel of at least about 125 g / cm2. ! 6. The method of claim 1, wherein the precipitated gellan gum provides an ultimate static shear stress of the 0.1% gel of at least about 150 g / cm2. ! 7.
