abstract 1. A method of preparing a potassium enriched food product, said method comprising introducing into the food product a certain amount of potassium enriching composition, and said potassium enriching composition comprises at least one basic potassium salt and at least one inorganic acid compound; however, the amount of potassium enrichment composition introduced is sufficient to create a potassium concentration in the food product of at least about 350 mg potassium / one serving of product; and at least one basic potassium salt and at least one inorganic acid compound are present in relative amounts sufficient to create a potassium-rich food product whose pH and total acidity are comparable to those of a non-potassium-rich food product; and the taste of the food product enriched in potassium is comparable to the taste of a similar food product not enriched in potassium. ! 2. The method according to claim 1, in which the amount of potassium-enriching composition is sufficient to create a potassium concentration of about 350 to 1750 mg potassium / one serving of food product. ! 3. The method according to claim 2, in which the inorganic acid compound contains potassium. ! 4.
