abstract 1. A method for producing iron-containing succinylated casein, comprising the steps of:! a) the reaction of casein with at least one succinylating agent to form an aqueous suspension of succinylated casein, and! b) reacting an aqueous suspension of succinylated casein obtained in step (a) with at least one iron salt to form iron-containing succinylated casein. ! 2. The method according to claim 1, in which stage (a) comprises the steps of:! (A1) suspending casein in water! (a2) if necessary, adjust the pH of the aqueous suspension to at least 6,! (a3) adding at least one succinylating agent while maintaining a pH of at least 6 by adding at least one base. ! 3. The method according to claim 1 or 2, in which stage (a) additionally includes a stage:! (a4) precipitating the obtained succinylated casein after adding the succinylating agent by adjusting the pH to about 2 to 7.0 to obtain an aqueous suspension of succinylated casein having a pH of from about 2 to 7.0. ! 4. The method according to claim 1, in which stage (b) includes:! (b1) adding at least one iron salt to an aqueous suspension of succinylated casein. ! 5. The method according to claim 1, in which the aqueous suspension of succinylamino casein, which must react with at least one salt of iron in stage (b), has a pH from about 2 to 6.! 6. The method according to claim 1, in which stage (b) includes a stage:! (b2) adding at least one iron salt to an aqueous suspension of succinylated casein while maintaining the pH of the aqueous suspension at least 2 by adding at least one base to obtain
