abstract | 1. A fat substitute containing at least one starch n-alkenyl succinate and at least one polyol. ! 2. The fat substitute according to claim 1, wherein the at least one starch n-alkenyl succinate is wax starch n-alkenyl succinate. ! 3. The fat substitute according to claim 1, wherein the starch n-alkenyl succinate is starch n-octenyl succinate. ! 4. The fat substitute according to any one of claims 1 to 3, in which the polyol is selected from the group consisting of glycerol, erythritol, threitol, arabinite, xylitol, ribite, allite, altrite, glulite, galactite, mannitol, sorbitol, talit, maltitol, isomalt, isomalt, lactitol, preferably sorbitol. ! 5. A fat substitute according to any one of claims 1 to 3, comprising:! a) from 20 to 60% by weight of polyols, preferably 30-60%, more preferably 45-55%, and! b) from 1 to 50% by weight of starch n-alkenyl succinate, preferably 20-40%, more preferably 25-35%. ! 6. The fat substitute according to any one of claims 1 to 3, in which the fat substitute further comprises a thickener. ! 7. The fat substitute according to claim 6, in which the thickener is selected from the group consisting of starches, flour, hydrocolloids and mixtures thereof, preferably from starches. ! 8. The fat substitute according to claim 6, wherein the system comprises:! a) from 20 to 60% by weight of polyols, preferably 30-60%, more preferably 45-55%,! b) from 1 to 50% by weight of starch n-alkenyl succinate, preferably 20-40%, more preferably 25-35%,! c) from 1 to 35% by weight of a thickener, preferably 15-30%. ! 9. The fat substitute of claim 8, wherein the polyol is sorbitol. ! 10. The fat substitute of claim 8 or 9, wherein the at least one starch n-alkenyl succinate is wax starch n-alkenyl succinate. ! 11.
