abstract | 1. A method of obtaining a mixture of galactooligosaccharides containing the disaccharide Gal (α1-6) -Gal, at least one trisaccharide selected from Gal (β1-6) -Gal (β1-4) -Glc, Gal (β1-3) - Gal (β1-4) -Glc, tetrasaccharide Gal (β1-6) -Gal (β1-6) -Gal (β1-4) Glc and pentasaccharide Gal (β1-6) -Gal (β1-6) -Gal (β1 -6) -Gal (β1-4) -Glc, where Gal is a galactose residue and Glc is a glucose residue, where a Bifidobacterium bifidum cell culture is added to lactose or a lactose-containing substrate, characterized in that said cells are reused up to eight times in subsequent synthesis reactions without reducing the yield of the specified mixture of galactooligosaccharides. ! 2. The method of claim 1, wherein said B. bifidum culture is a culture of strain NCIMB 41171 deposited with the National Collection of Industrial and Marine Bacteria, Aberdeen, UK, March 31, 2003, or a biologically functional equivalent as defined herein. ! 3. A method according to claim 1 or 2, wherein the lactose-containing substrate is selected from the group consisting of whole milk, semi-skimmed milk, skim milk, whey and vegetable fat milk replacer. ! 4.
