The invention improves the stability of / 3-carotene in clathrate, which is achieved by co-dispersing in the presence of water / 3-carotene with a 3 - 7-fold excess of / 3-cyclodextrin for 20 - 40 min, the hallmark of which is dispersion in the presence of ascorbic acid and malt extract in amounts corresponding to Only 0.2 - 10% and 30 - 40% by weight of the starting components.
