abstract FIELD: food industry. SUBSTANCE: yeast strain N 69 is obtained in biochemistry and microbiology department VNIICHP after breeding of haploid cells of yeast strain "Djambulskaya-60" and yeast culture isolated from the French yeast. Special properties of strain N 69 as compared with that of early used yeast cultures: high enzymatic activity of maltase (45 min), zymase (65 min), resistance to the temperature growing changes (from 25 to 45 C) and acidity of fermented brew (from 8 to 18 degrees), and high rate of multiplication (0.3-0.22 h) that corresponds the cell content in liquid yeast 250-350000 cells/g. EFFECT: preparing of yeast strain showing high maltase and zymase activity and high thermal stability. 1 tbl
