abstract |
The invention relates to a process for the purification of microbial protein isolates by removing substances with unpleasant odor and taste from microbial protein materials by treating the latter with aqueous solutions containing unfossiated and / or hydrophilic aliphatic substances with 2 to 6 carbon atoms containing at least two functional groups of the hydroxyl, formyl, keto and carboxy groups. Preferred aliphatic extractive auxiliary materials are degustative acids, sugars and polyols, and ortho- and diphosphate phosphates. The extraction can take place in the context of a reduction in the content of nucleic acids of the degreased cell masses. |
