abstract | The invention relates to a process for obtaining a nutraceutical product with reproducible biological activity. The process according to the invention consists in the preparation of the starter culture by culturing on colostrum a yeast strain producing proteases and lipases, inoculated with min 2.5 x 108 CFU / ml, respectively, inoculation with 0.2 g of artisanal kefir granules and 0.2 g strains of commercial lactic acid bacteria and development for 48 h, resulting in 100 ml of laboratory starter culture, which is used to inoculate 1 l of reconstituted colostrum, resulting in primary, secondary and industrial culture, respectively, which is continued until a level of 0.5 mg / ml total protein is reached, an antioxidant activity of at least 2.2 microM and a potential for inhibition of the angiotensin converting enzyme of at least 50%, and spray drying of the industrial culture product. |
