abstract The invention relates to a method for determining the fungicide tiram from food products. The method according to the invention consists in the enzymatic reaction in solution of an enzyme aldehyde dehydrogenase isolated from a bacterium of provenance from the waters of Antarctica, in the presence of the enzymatic cofactor and a benzaldehyde substrate and the production of amperometric measurements with a sensitive sensor for the cofactor , of graphite electrode type modified with carbon nanofibers and with the Meldola Blue mediator, for electrochemical detection of the degree of inhibition and implicitly of the concentration of tiram from small quantities of samples under analysis.
