The product according to the invention is based on collagen polydispersities having a molecular weight of 4000 ... 6000 Da with a population of 60% of particles with dimensions of 1 ... 10 nm and two populations with a weight of 14%, and and 26%, respectively, of 100-1000 nm and 1000 to 5000 nm respectively, a polydispersity index of 0.6 and a content of 6 to 10% of free amino acids, respectively. The process according to the invention consists in the compact thermal-enzymatic hydrolysis of leather waste, in which the collagen thermal denaturation and gelatin extraction is first carried out, and in the second stage the fragmentation of the polypeptides by enzyme-catalyzed hydrolysis takes place and the reduction molecular mass, with the release of amino acids, including essential amino acids.
