abstract | The invention relates to a natural grape-based food sweetener and to a process for preparing the same. The claimed sweetener is presented as rectified concentrated grape juice with a clear liquid appearance, having a sugar concentration of minimum 830 g/l, a density of minimum 1.35 g/l at 20°C, a titratable acidity of maximum 1g/l in tartaric acid and maximum 400 g/l total polyphenols and a high content of free varietal flavours and precursors thereof. According to the invention, the process consists in treating grapes with 100...200 mg/kg potassium metabisulphite, crushing-destemming the grapes to result in the must which is subjected to treatment with 3...5 g of enzymatic preparation in order to extract the free varietal flavours and flavour precursors, pressing the must to result in the grape juice which is cleared, subjected to protein stabilization, free sulphur dioxide content correction, rectification of the clear grape juice by ion exchange, followed by the concentration of the rectified grape juice by reverse osmosis, the grape juice being stored and subjected to physical-chemical control. The claimed process multiplies by up to 4 the initial concentrations of free flavours and precursors, so that it can contribute indirectly to improving the sensory profile of wines whose composition will be corrected with such a sweetener. |
