A process for the production of a baking yeast is described, which consists in fermenting a strain of baking yeast, using a carbon source other than molasses, until a fermentation product with a dry matter content of at least 10%, preferably at least 13%, more preferably at least 16%, a product which can be used directly, without concentration, as a yeast cream. |
