abstract An improved process of transesterification of twonsolvent-free, to prepare from a polyol andnfatty acid derivatives of an easily removable alcohol, polyether fatty acid polyestersnhighly esterified having low levels of digested ketones and γ-ketoesters.nThese reduced levels of digested ketones and β-ketoesters are alkaryl-nThe level of alcohol generated in the liquid phase of the reaction mixture was controllednand heating the reaction mixture to certain temperatures during the secondnstage of this improved process. Other optional reaction conditions, such asnmaintaining the molar ratio of fatty acid esters to polyol within a specific rangenand reduce the level of the basic catalyst, may also be used duringnthe second stage of the reaction to further reduce the level of digested ketonesnand / or β-ketoesters.
