THE EXTRACT OBTAINED RICH IN FLAVAN-3-ÓIS, ESPECIALLY IN CATECHINE, HAS A GREAT PRESERVATION CAPACITY WITH EXCELLENT ANTIOXIDANT EFFECTS DUE TO THE PRESENCE OF A HIGH CONCENTRATION OF THIS COMPOUND (VALUE SIMILAR AS FOUND IN YOUR TEA, WHICH IS FOUND IN THE TEA OF THE GREATEST CONTENTS OF THIS MOLECULE), VALUING IN THIS MODE THE EXTRACT IN APPLICATIONS IN THE FOOD INDUSTRY. IN ADDITION, THIS EXTRACT REVEALS GREAT STABILITY IN THE OPTIMIZED TEMPERATURE, PH AND STORAGE CONDITIONS. ADDITIONALLY, AND FOR THE SAME CONDITIONS, PRESENTS GREAT STABILITY IN AQUEOUS MEDIA WHEN SUBJECT TO SIMULATION STUDIES OF FOOD APPLICATION.
