abstract | The present utility model discloses the making of Pato tim from Muscovy duck (Cairina moschata),which was fed with left-over food stuffs and tri-chanthera plants. The process involves: securing l head of Muscovy Duck which is a product of research; cleaning the duck thoroughly by rubbing rock salt and ginger all over the body and including the inner cavity. mixing all ingredients for the marinade namely : l head minced garlic; l piece onion - sliced, 1 piece lemon grass; 2 pieces medium sized bay leaf; 3 cups Pineapple juice; 1/2 bottle Beer, 1 teaspoon rock salt, 1 teaspoon soy sauce, 1 tablespoon muscovado sugar; marinating the cleaned duck to the mixture in step (c) overnight; removing the duck from the marinade; frying the marinated duck until the skin turns golden brown and caramelized; setting-aside the marinade mixture ; putting the stewed Muscovy duck in a large pot and adding the set aside marinade; seasoning the duck with a pinch of monosodium glutamate to enhance flavor; cooling the seasoned Muscovy duck; packaging the cooled Muscovy duck in an appropriate container. |
