abstract Disclosed is the process of producing tilapia dumplings comprising the following steps: preparing of tilapia meat by stripping the meat from the bones, and separating the flesh from the skin, washing and slicing the meat and marinating with lemon juice, salt, monosodium glutamate, chopped mung bean sprouts, minced onions, minced bell pepper and eggs, folding and mixing the mixture until it becomes sticky, filling each dumpling sheet with a teaspoon of mixture and folding into a desired style, twisting the dumpling to tighten and forming the space into flower petals, this dumpling is then ready for steaming.
