abstract IT REFERS TO A PROCESS TO OBTAIN AVOCADO OIL ENRICHED IN ALKYL POLYOLS AND ITS ACETYLATED DERIVATIVES FROM AVOCADO SEEDS, WHERE SAID AVOCADO SEEDS ARE FROM 10 TO 50% BY WEIGHT IN RELATION TO THE TOTAL WEIGHT OF THE AVOCADO, IN THE THAT THE PROCESS INCLUDES: A) SLICING OR CRUSHING THE AVOCKS WITH A SEED CONTENT OF 10 TO 50% P / P; B) DRY AT A HIGH TEMPERATURE BETWEEN 60 AND 150�C UNTIL YOU OBTAIN A RESIDUAL HUMIDITY CONTENT LESS OR EQUAL TO 5%; C) ADD WATER TO THE DRY AVOCADO IN AN AMOUNT OF 1 TO 5% OF WATER OR WATER VAPOR IN RELATION TO THE WEIGHT OF THE DRY AVOCADO; AND D) EXTRACT OIL THROUGH MECHANICAL PRESSURE AT A TEMPERATURE OF 80 TO 100�C; WHERE THE ALKYL POLYOLS ARE SATURATED, MONOINSATURATED OR POLYINSATURATED TRIOLS OF THE TYPE 1,2,4-TRIHYDROXY LINEAR NON-BRANCHED ALIPHATIC FROM C17 TO C21. ALSO REFERS TO AN UNAPPENSABLE OF AVOCADO ENRICHED IN ALKYL POLYOLS USEFUL AS A DRUG FOR THE TREATMENT OF ARTHROSIS, RHEUMATISM, GINGIVITIS
