abstract A cheese product made from cheese and a treated milk powder is disclosed where the treated milk powder was made by: adding a sequestrant for calcium directly to skim milk to make treated milk and forming the treated milk into the treated milk powder. The sequestrant binds free calcium ions in the treated milk to a level that prevents substantially all aggregation of rennet hydrolyzed milk proteins in the treated milk, and an oxidoreductase enzyme was also present in the treated milk. The oxidoreductase enzyme converted at least a portion of lactose in the treated milk to lactobionic acid or salts thereof. The treated milk powder comprises substantially no aggregation of the rennet hydrolyzed milk proteins due to the sequestrant’s binding of calcium ions in the treated milk.
