abstract Discloses a process for preparing particles, which particles contain spaces in which a gas phase is present which comprises at least one active ingredient. The said spaces are surrounded by an enveloping phase which at ambient temperature is solid and impermeable to the active ingredient. The process comprises the steps of: (i) allowing the gaseous active ingredient to migrate from or through the enveloping phase into the space or spaces at a temperature at which the enveloping phase is permeable to the gaseous active ingredient; (ii) and then cooling the particles to a temperature at which the enveloping phase of the particles is at least substantially impermeable to the active ingredient in the particles The active ingredient is an aroma or volatile flavouring agent or precursor. The enveloping phase may be from a group of selected carbohydrate compounds or whole proteins. Further disclosed are specific conditions at which the process is carried out. Also discloses spray dried powder particles obtained according to the said process. The particles may form part of e.g. a food composition or personal care product.
