A method to reduce the amount of acetoin that accumulates in yeast. The method comprises producing a yeast strain in which the BDH1 gene encoding Bdh1p is overexpressed. The overexpression catalyses the reduction of acetoin to 2,3-butanediol according to a rate that is at least twice that of the initial strain. The yeast can be used in methods for fermenting fruit juice, in particular grape juice, and for producing 2,3-butandiol. |
