Disclosed is an enzyme composition for the detoxification of gluten, comprising an effective dose of cysteine endoprotease B, isoform 2 (EP-B2) and Sphingomonas capsulata prolyl endopeptidase (SC-PEP) in a ratio that provides for synergistic activity in detoxifying gluten toxicity, wherein the ratio of EP-B2:SC-PEP is from about 10:1 to about 1:10 by specific activity. Also disclosed is an in vitro method of detoxifying gluten, the method comprising contacting gluten containing foodstuff with an effective dose of a glutamine endoprotease B, isoform 2 (EP-B2) and a Sphingomonas capsulata prolyl endopeptidase (SC-PEP) in a ratio that provides for synergistic activity in detoxifying gluten toxicity, wherein the ratio of EP-B2: SC-PEP is from about 10:1 to about 1:10 by specific activity. |
