abstract | Disclosed is a cheese with improved meltability made by the process comprising: a) cooling milk to a temperature sufficient to release beta-casein from the micelles containing beta-casein; b) separating beta-casein from other milk proteins using a polymeric microfiltration membrane to form a retentate depleted in beta-casein; c) cooling the retentate depleted in beta-casein to a temperature sufficient to release beta- casein from the micelles containing beta-casein; d) separating the retentate depleted in beta-casein using microfiltration with diafiltration to obtain beta-casein-depleted milk protein concentrate; and e) using the beta-casein-depleted milk protein concentrate to produce cheese with improved meltability in comparison to corresponding manufactured cheese. |
