abstract | A cream cheese composition that does not require refrigeration and can be dispensed from a pressurized can is an acidified composition including a cheese component of natural or analog cheese, a condensed phosphate emulsifier such as sodium acid pyrophosphate or sodium hexametaphosphate, dispersed within the cheese component, and other additives such as milk or water and so on, different from the condensed phosphate emulsifying system. The condensed phosphate system and the one or more additional additives are added in an amount sufficient to ensure that the pH of the composition is less than or equal to 4.8. |
