A soy protein-containing cheese and method for the production thereof having the steps of: (1) blending a hydrolysed soy protein particulate ingredient containing soy protein having a molecular weight of about 4.000 to about 40,000 Daltons, dairy protein, dairy fat, emulsifying salt and water in amounts sufficient to form a non-emulsified mixture; and (2) cooking the non-emulsified mixture at a temperature ad for a time sufficient to produce the soy-protein-containing cheese, wherein the soy protein-containing cheese has at least about 5 percent soy protein. |
