A method for evaluating the amount of the unsaturated fatty acid content in beef fat on the basis of a genotype of bovine stearoyl-CoA desaturase to evaluate whether it is cattle from which good quality beef with good taste and texture can be produced is described. The method comprises determining the single nuclear polymorphisms (SNP) found in the gene of SEQ ID NO:1 present at position 878 and at positions 702, 762, 878, 1905, 3143, 3351, 3537 and/or 4736. |
