abstract Described is a method for removal of protein from non-stabilised and acid stabilised crustacean shell wastes. The method comprises grinding non-stabilised crustacean shell wastes and water to a relatively small particulate size or grinding acid stabilised crustacean shell wastes to a described small particulate size, transferring said small particulate size product and desired shell wastes to a digester and adding a predetermined quantity of krill enzymes to the digester. The mixture is then subjected to digestion for a predetermined time period at a predetermined temperature, the digested product is dewatered to obtain a first portion being relatively enzymatically active and relatively high in protein and a second portion of shell material or shell ash relatively high in chitin and low in protein. Also described is a method of producing a concentrated krill hydrolysate comprising the steps of harvesting krill having proteins and other nutrients and digesting the krill through enzymatic activity and partial hydrolysis to obtain liquid krill hydrolysate without deactivating enzymes in the krill, evaporating the krill hydrolysis to increase the percentage of solid in the krill hydrolysate relative to the liquid and to obtain the concentrated liquid krill hydrolsyate. The harvesting, digesting and evaporation providing a partial hydrolysis and more nearly maintaining the initial structural characteristics of the proteins and other nutrients of the krill hydrolysate.
